Men's cream muffins

Mmh, Westphalian men's cream from Münsterland - a real classic! The traditional Herrencreme originates from the Münsterland and is prepared on the basis of vanilla pudding, cream and dark chocolate. For that certain something, of course, the shot of rum must not be missing! In this picnic recipe, the men's cream comes packed in muffins, ideal for the picnic basket. - Try it out and surprise your picnic friends!

Ingredients

For 12 muffins:

Ingredients Dough:

  • 150 g soft butter
  • 100 g sugar
  • 150 g wheat flour
  • 3 room temperature eggs (size M)
  • A little vanilla extract
  • 2 level teaspoons baking powder
  • 1 pinch of salt
  • 12 muffin tins
  • Some icing sugar for dusting


Filling ingredients:

  • 1 sachet vanilla custard powder
  • 500 ml milk
  • 50 g sugar
  • 6 tbsp rum
  • 100 g dark chocolate
  • 200 ml cold cream
  • 6 tbsp San-apart (vegetable stabiliser; can also be omitted) - but then you have to prepare the filling in the evening or put it in the fridge at least one hour beforehand to chill it).

...and this is how it is done

  1. Prepare the vanilla pudding with the milk and sugar according to the instructions on the packet and leave the pudding to cool well.
  2. Whip the cream until stiff and chop the chocolate finely with a knife.
    While the pudding is cooling, prepare the muffins.
  3. Mix the soft butter with the sugar in a food processor or with a hand mixer and add a pinch of salt.
  4. Gradually stir in the room-warm eggs.
  5. Mix the flour with the baking powder, pass through a sieve and mix with the other ingredients to make a smooth batter. Add a little vanilla extract to the batter.
  6. Preheat the oven to 180 °C convection oven. Place the muffin tins in a muffin baking tray and divide the batter evenly between the tins. Bake the muffins in the oven for about 20 minutes until golden brown and then leave to cool well.
  7. Mix the completely cooled pudding with the rum and the chopped chocolate.
  8. Carefully fold in the cream. Mix the cream with the San-apart* and chill well. (The cream tastes best if it is allowed to stand overnight).
  9. Using a small knife, cut a circle out of the muffins so that they can be filled with the meringue cream.
  10. Once filled, the cut-out piece of the muffin serves as a lid. Pour the meringue into a piping bag with a large nozzle and pipe the filling evenly into the muffins. Place the lid on the muffins and dust with icing sugar.

Tip: Leftover meringue cream or leftovers from the cut-out muffins can be eaten in advance.


*San-apart can also be omitted (see above).
